Sumi ink is a soy-based ink, it's not very expensive, a couple of dollars for a bottle. You can buy special sumi paintbrushes or use watercolor brushes in a pinch. You dilute the ink with water to get varying shades of grey. There are some really good books that can get you started on techniques - amazon.com has a bunch or your local library might have them, too. :)
