Iced Apple Mint Tea
2 1/2 cups water
2 tea bags
1/2 cup chopped fresh mint or 1 tablespoon mint flakes
1 strip lemon peel, about 2 inches long and 1/2 inch wide
2 cups unsweetened apple juice or cider
1 Tbs lemon juice
4 sprigs mint (optional)
1. In a medium-size saucepan, bring the water to a boil over moderatelv high heat-about 3 minutes. Pour the boiling water into a warmed teapot and add the tea bags, mint, and lemon peel; cover and steep until cool-about 20 minutes. Remove and discard the tea bags.
2. Strain the tea into a 2-quart pitcher and stir in the apple juice and lemon juice.
3. Fill 4 12-ounce glasses with ice cubes and divide the apple-mint tea among them. Stir briskly and garnish each drink with a mint sprig, if you like. Serves 4.
