
..Also called "hunter's chicken", and yes, its VERY good.
The only thing you need to keep in mind is: You need to have the TIME to make this, this is a dish that is best meant for your slow cooker!
1/2 cup flour
1/2 teaspoon salt
1/4 teaspoon ground black pepper
fresh chopped basil
pinch of tarragon
pinch of thyme
4 chicken thighs, skin on (you can also use legs - if its wings, I would double the amount of ingredients!)
2 tablespoons vegetable oil (used olive oil)
1 onion, chopped
2 chopped shallots
2 cloves garlic, minced
1 green bell pepper, chopped (optional, didnt add in)
1 (14.5 ounce) can diced tomatoes (I used one can tomato paste - its more than enough!)
1/2 teaspoon dried oregano (skipped)
couple of whole bay leaves
1/2 cup white wine
3/4 cup chicken stock (plus 1/4 cup reserved)
2 cups fresh mushrooms, quartered (I had one box dried porcini mushrooms)
salt and pepper to taste
Combine the flour, salt and pepper in a plastic bag. Shake the chicken pieces in flour until coated. Heat the oil in a large skillet (one that has a cover/lid). Fry the chicken pieces until they are browned on both sides. Then add in the chopped garlic and one chopped shallot, and saute' just a bit more! Remove from skillet....and then toss the chicken, oil, chopped garlic / scallion and all right into the crock pot!
Add the rest of the onion and shallots to the crock pot...then add the tomatoes, (or tomato paste) oregano (or chopped basil) and wine. Then add the chicken stock, and the dried porcinis, then cover in the crock pot and set it to high for a good 30 minutes - then set on low after that! (This takes about 2-3 hours... but trust me it is worth the wait!!!) If you find its still too thick then you can splash in that 1/4 cup extra stock, but no more than that - as you are making a meal, not a soup :P
Add salt and pepper to taste. (You wont need all that much, its a rich, RICH sauce :B) Simmer for 10 more minutes....and in the meantime you can cook up some rice pilaf in a box or toast up some garlic bread along with it...
And then serve and enjoy !
