It's on old song from the 14th Century. There are a number of versions but google likes to only bring up the In Extremo version (admittedly where I first heard the song, but not the version in that video)

Found it! The version is by Saltatio Mortis under a different song title, "Leporina Venatio" (holy shit! I used to be good friends with their guitarist/bagpipe player).
