Simple, iMovie and Final Cut Express/Pro are basicly consumer editing software, where as Vegas is a true professional editing suite that rivals Adobe Premiere and After Effects. (Personally, I like Vegas much more than Adobe. I find Adobe is annoyingly nonintuitive, and absolutely hate that you can't see what you've edited until it's rendered. Note the preview window in Vegas.) Vegas is used in dozens of commercial products and movies, and has just about any type of plug-in you can imagine, including image stabilization.
I'd strongly suggest to test them yourself. Both Vegas and Premiere are very powerful tools, but with applications like this, it's sort of like buying shoes: People can make suggestions left and right, but it's you who has to use it, and both applications have their own intuitive style. You have to be able to use it in a comfortable way, and since everyone has their own style and their own methods of doing things, you have to try and see if you can work with a particular application.
