Well who among us can say they don't enjoy a good ol' fashioned cup of potato soup?
I've had many variants of this classic, simple dish an loved every single one of'em! So this time I thought I'd share with y'all m'own lil' variation of this classic dish.
ingredients:
2 cans of Campbell's cream of potato soup
3 small red potatoes
4 slices of bacon
2 slices of american cheese
a large clawfull of shredded colby & monterey jack cheese blend
small amount of sliced green and (diced) white onion
seasonings:
a dash of Mrs. Dash garlic & herb seasonings
a dash of Nature's blend seasonings
a dash of salt (optional fer you low sodium types)
1/4th stick of butter
sprinkling of parsley
1.) slice the red potatoes inta large diced portions and place them into a medium sized cooking pot with the butter and seasonings. Set this ta cook on low while frying up the bacon. Pre-cut bacon into small sections then set aside on paper towel covered plate to drain away excess grease.
2.) steam red potatoes until they've softened a bit then add the diced white and green onion (savin' a small portion for topping garnish if desired) and add all the seasonings to steam cook with potatoes.
3.) after the reds have softened, add the two cans of cream of potato soup and most of the bacon bits (again save some for top garnish if so desired) along with the 2 slices of american cheese. and the colby & monterey jack and let this simmer for a few minutes on low.
test for softness of potatoes and bacon then serve in large soup bowl. As garnish toppings for this I simply sprinkled on a small bit of the C&MJ cheese,diced green onion, parsley flakes an a few of the bacon bits I kept.
An there ya have it... another hot soup dish that's especially welcomed on those chilly nights but still a treat anytime yer in the mood fer some potato soup... Hope ya like it :)
