So made this for dinner last night, serves 8 people. Here ya go ^w^
Ingredients
1 package(10 oz) frozen chopped broccoli or leaf spinach, I used broccoli
2 pounds ground beef
2 eggs
1/2 cup bread crumbs
1/4 cup catsup(ketchup)
1/4 cup milk
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon dried oregano leaves
1 teaspoon salt
1 package (3 oz) smoked slice ham
3 slices mozzarella cheese, each 3x3 inches, cut diagonally into halves(optional)
Directions
1) Rinse frozen broccoli/spinach under running cold water to separate, drain.
2) Mix ground beef, eggs, bread crumbs, catsup, milk, 1/2 teaspoon salt, the pepper, and oregano.
3) Pat hamburger mixture into rectangle, 12x10 inches on piece of aluminum foil, 18x15 inches.
4) Arrange broccoli on hamburger mixture to within 1/2 inch of edges, sprinkle with 1 teaspoon of salt.
5) Arrange ham on broccoli and roll up rectangle carefully, beginning at 10- inch side and using foil to lift. Press edges and ends of roll to seal.
6) Place on rack in shallow roasting pan. Cook uncovered in 350 degree oven for 1 hour 25 minutes. Overlap cheese on top and cook just until cheese begins to melt, about 1 minute longer. ( Center of meat loaf may be slightly pink due to ham)
7) Garnish with celery leaves if desired.
Do ahead tip
After rolling, cover and refrigerate meat loaf no longer than 24 hours. Cook as directed except increase first cooking time for an hour in a half.
