It's called Antron Fleece - as Cavie said it's most commonly used to make puppets, as unlike with standard fleece, it doesn't show its seams. As for breathability, I'll let Cavie answer that one, but I would imagine it gets less warm than standard fleece, as Antron is one-sided.
I found that my hands didn't get too hot or sweaty even after I had worn them for a couple of hours at a convention. I don't have any experience wearing handpaws made of fur fabric for that long but I think that because the fleece isn't as thick it makes it more breathable.
