
I found this on a site I browse, and after tweaking a few ingredients ... I present to you this! Now, the original recipe claimed to be about 4 points on the Weight Watchers plan, so my best guess is that I've cut it in half. I love the touch of heat that this has brings it all together. Not only that but capsaicin (the component that makes peppers hot) helps curb appetites and increases circulation, thereby helping boost your metabolism. YAY! This recipe freezes and refrigerates well. You could probably have a large bowl and some crusted bread with it and still be under 5 points.
Ingredients:
3 (14 1/2 ounce) cans chicken broth, reduced sodium/reduced fat
2 (1 lb) bags frozen broccoli
1 (10 1/2 ounce) can Rotel brand tomatoes and green chilies
1-2 tsp cayenne pepper (to taste, I like 1 tbsp[3 tsp])
10 ounces Velveeta fat free cheese product
Directions:
Mix chicken broth, frozen broccoli, cayenne pepper, and tomatoes w/chilies together.
Simmer for 30 minutes or until veggies are tender.
Cube Velveeta and put into soup pot.
Simmer just until cheese is melted and smooth.
Not everything I make is totally fattening. More healthy stuff to come in the future!
