Okay just so you know Kangaroo meat is very common in Australia and I realise that many won't be able to source it as in many places it is a high end gourmet product. Even here in Australia its popularity has increased and demand has driven the prices up by double over the last 10 years.
The meat it's self works great with almost any side dish and cuisine but it should be noted it doesn't like to be heavily cooked. Steaks and roasts are usually cooked while keeping a little shade of pink in the middle and it's usually the biggest error and turn off for most people, when its cooked too much. On the flip slide some cuts like roo tail are great for long cooking stews and casseroles.
Roo Patties (Simple)
Ingredients
1kg kangaroo mince
500g sausage mince
3/4 cup of fine breadcrumbs
Pepper to taste
1 tbsp of soy sauce
1/4 cup seasoning:
I used Nostimini (http://www.gaganisbros.com.au/go/ou.....ucts/nostimini)
Please note: that you can use any range of seasoning that you like...salt and pepper, dried herbs, onion or garlic flakes. This recipe is Roo Patties in their simple form. The use of sausage meat is to help the ingredients combine and regulate the cooking time.
Directions
Combine all ingredients well using your hands and form into meatballs, patties/rissoles or burger patties. (Mix can be quite sticky so if you want use food grade gloves)
Pan fry on medium heat in a pan with a little olive oil until brown on both sides and just cooked through. Takes about 10 -15 minutes a side depending on the size of your patties and what your heat source is. (I use an electric pan on heat 6/7 with a non-stick paper in it so I don't need a lot of oil.)
To Serve
I simply put my patties on a plate and serve with salad or veg and sometimes with some dipping sauce.
Or
Thread three patties on a stick with dipping sauce on the side.
Goes great with mash and mixed vegetables too or rice and veg.

Add
1 finely minced onion
4 cloves of finely minced garlic
1 finely minced carrot
1 finely minced parsnip
finely minced fresh herbs like mint, basil and parsley
a dash of chilli sauce or finely minced chilli
You may need to add a little more liquid if the patties don't hold together. This can be some bbq sauce, tomato sauce or even a small egg if desired.
Optional: A small handful of finely chopped nuts and or seeds such as unsalted pistachios, pine nuts, poppy or sesame seed.
BBQ or cook in a pan until cooked through and brown.

Roo Jerky isn't as easy to find as the roo meat itself. There is one shop about two hours drive from where I live that I can access it from. A little speciality shop that produces roo metwurst, roo jerky, a variety of roo sausages, a variety of roo cuts, roo roasts, roo tail for stews and soups, roo mince for pets, human grade roo mince, diced roo...you name it and if it can be done with roo they will likely have it.
I have thought to try and make some myself sometime as roo meat is available in our local supermarkets just 5 minutes away. *hugs*
