1- Medium can of Mild Enchilada sauce
8- 8inch corn tortillas
1 block of mild cheddar cheese grated
1lb of ground beef (thawed)
some salt
some pepper
1/2 a can of diced black olives
Preheat oven to 375
I browned the meat in a 10in skillet seasoning with salt and pepper. After I had the meat browned I set it aside to cool down as I heated the enchilada sauce in a sauce pan. when it was warm, not boiling, I removed from heat and spooned some into a 8X16 baking pan, (going off the size of the tortillas lol) anyway I covered the bottom in a thin layer and set to heating the tortillas in an ungreased 8 in pan. after they were very warm to the touch and easy to roll without breaking I placed in the baking pan, added a spoonful of sauce to cover it then added a little more than 2 tablespoons of the ground beef, and a generous amount of cheese before rolling into a loose burrito. repeated process with the next 7 tortillas. Add olives if desired. When done rolling add the remainder of the sauce over the top of the tortilla's and then cover with cheese. Place in preheated oven and cook roughly 30-45 minutes.
Pull out and let cool. Will be mushy, to prevent mushiness cook tortillas in oil, this will help prevent the absorption of the sauce into the tortillas.
Cut into desired slices and serve.
