So also with those Mediterranean Cornish Hens, there was a couscous recipe added in there - http://www.furaffinity.net/view/14391770/
SO:
Get a medium saucepan and put in 2 tablespoons butter, get pan to medium-high and then saute' onions until translucent - add a touch of salt - and then add the cous cous to toast for about 3 minutes.
Add the broth, and season with salt and pepper to taste then cover and then let it cook until the liquid is absorbed, which takes 8 - 10 minutes...then add in the zucchini and let cook until tender, about 3 more minutes.
What I also did was - right at the end, I added a bit more lemon zest and some dried cliantro instead of fresh - about 1 teaspoon...and you can always add maybe 1 teaspoon of butter to loosen it up.
Should have thought to add in one cube of fresh cilantro I have frozen in my ice cube tray, but I was rushing back and forth between cooking this, and the chicken at the same time XD
Ah well, it came out pretty good at any rate, so enjoy!
