Hamburg ( makes about ten patties
1/2 a large sweet onion minced
1cup fresh, or reinstituted hijiki, well rinsed and drained
1/2 cup carrot julienne sliced and slightly minced
1/2 cup Eringi minced ( shiitake will work just as well)
1/2 cup of panko ( crushed crackers also work well, but NOT Cheeze-It's! ... Bad mistake there)
2 eggs
300 grams of minced meant
2 Tablespoons milk
Salt and pepper to taste.
2tbsp vegetable oil.
First sauté the onions over medium heat until tender in veggie oil. Set aside to cool, then mix with the carrot, hijiki, and Eringi.
In another big bowl add the meat, and panko, mix well. Then add the eggs, mix well. Dump the other bowl in with the meat and mix together, add the milk during the last few mixes.
Add salt and pepper to taste.
Get out a good sized plate and preform your patties. In a large fry pan, heat the oil over medium heat. Once the pan is hot add the patties. Fry for about 5-7 seven minutes on one side, then flip. Once browned on both sides and done, set on another plate to cool slightly before serving.
sauce: 2tbsp of catchup, 1 tbsp mayo, 1 tbsp okonomiyaki sauce ( or a little soy sauce with a tiny bit of sugar)
