I found my first Morels since moving to Montana and made this with them.
Recipe (serves 2):
Ingredients:
2 beef tenderloins
1 T butter
~2 C fresh morels
2 cloves garlic (minced)
1 T fresh sage (chopped)
1/2 C white wine
1 T sour cream
salt and pepper to taste
Directions:
season tenderloin with salt and pepper to taste.
cook tenderloin as you wish to preferred rarity (I just tossed mine in a skillet and cooked it to medium rare)
set aside and keep warm.
wash and slice the morels.
melt butter in saucepan over medium heat.
place morels in saucepan and saute until soft (2-3 min.).
mix in sage and garlic and cook until fragrant.
add wine and bring to boil.
reduce sauce by almost 3/4.
remove from heat and mix in sour cream.
spoon sauce over the tenderloin and enjoy.
I have only made this once and wrote the recipe down as well as I can remember. I was not keeping track of time or amounts and have not gotten a chance to test the recipe. If anyone has suggestions, feel free to comment.
