Cereal Biscuits/Cookies
This works with just about any cereal. In the biscuits pictured I omitted sultanas and choc chips but I used Special K as the cereal component and threw in a pack of chocolate sprinkles. I'm lazy and usually go for Option 1 (see below) rather than rolling the dough balls in the cereal. This will make about 4 trays of biscuits (roughly 48 cookies) so halve it for a smaller batch.
Ingredients
250g Butter (best at room temperature or cut up small to make it easier to beat)
280g (about 1 & 1/3 cups) Brown sugar
4 Eggs
2 tsp. Vanilla
550g (about 3½ cups) Self-raising flour
160g (about 3 cups) Lightly crushed cereal (Cornflakes, Special K, whatever you need to use up)
Optional additions
2 cups Sultanas
1-2 cups Choc Chips
Directions
Step 1: Preheat oven to 180°C and Line 2 baking trays with non-stick baking paper.
Step 2: Use an electric beater and beat the butter, sugar and vanilla in a large bowl until pale and creamy. Add in one egg at a time, beating well after each addition until combined.
Step 3: Fold in the flour, any fruit or choc chips until combined.
Step 4:
Option 1: fold in the crushed cereal then using your hands make into balls and go to step 5
OR
Option 2: using your hands make balls of dough and roll in the crushed cereal to coat then go to next step.
Step 5: Place balls of dough from either Option 1 or 2 about 3cm apart to allow for spreading, onto prepared trays.
Step 6: Bake in prepared oven at 180°C for 18 – 20 minutes swapping trays halfway through cooking or until golden. Remove from oven. Set aside on the trays for 5 minutes before transferring to a wire rack to cool completely.
Store in an airtight container.
Served with fresh fruit and Strawberry Fizz drink (http://www.furaffinity.net/view/14386893/) for a light sweet snack or supper.
