A chili cook-off winner from
!
I won second place in my work's annual Chili Cook-off in 2013 with this entry, and in this year's cook-off I had a few people disappointed that I did not make it again. This is not a traditional chili. The cook-off is a freestyle cook-off, Entries do not have to be traditional. Recipe is as follows:
Buffalo Chicken Chili
Ingredients:
2 boneless, skinless chicken breasts
1 can (14.5 oz) diced tomatoes
2 ribs celery
2 carrots
1 medium onion
2 Anaheim peppers (seeds removed)
2 cans pinto beans (drained)
1 bottle (12 oz) buffalo wing sauce (I use Frank’s RedHot Wing sauce)
1 container (6-8 oz) crumbled bleu cheese.
Directions:
Chop celery, carrots, and onion in a food processor and place into a slow-cooker.
Dice the Anaheim Chiles and place into slow cooker
Cut chicken into strips and place into slow cooker
Add the tomatoes, beans, and sauce
Stir once then cover and cook on low for 6-8 hours or on high for 3-4 hours; stirring occasionally to help break up the chicken.
When time is up stir one more time then sprinkle the bleu cheese on top and serve. (or serve and sprinkle bleu cheese on top of each bowl)
