A great rub for ribs from
!
This year for my birthday, I proposed we have a cookout, A real cook out! Everything made by hand. Being it was my birthday, I got to pick/make the main dish. You might be thinking, 'who wants to cook on their birthday?' Well I come from a family of chefs, bakers, builders, and artists, we like watching people enjoy the fruits of our labor.
So as is no surprise by the title and image above, I picked BBQ Baby Back Ribs. Now this "recipe" is really just for the Rub and preparation I went through to get it grill ready. I feel like this is probably the most important part.
Lets start with what you will need:
This is an easily adjusted rub, and Ill give measurements for 2 racks.
-3 tablespoons salt
-2 tablespoons chili powder
-2 tablespoons packed brown sugar
-2 tablespoons paprika
-1 tablespoon garlic powder
-2 teaspoons ground mustard
-1 teaspoon freshly ground black pepper
-2 Racks of Ribs
To prepare your ribs for the rub.
-There will be a thin membrane on the underside (concave side), Slide a sharp knife under it on one side, once you get a enough to hold on to, its pretty easy to just peel the rest off by hand.
-I cut the ribs in half so they're easier to work with.
-After mixing all the above ingredients together, begin applying it to both sides of the ribs by rubbing or patting.
-using long pieces of tinfoil, I made packets, putting one full rack (2pieces) in each, then I fold the tinfoil up over it to create a sort of tent. Don't just wrap the ribs in tinfoil.
I let these set in my fridge for almost a full day, probably about 12 hours, you can do more or less depending on how much time you have to prepare yours.
After that take them out, let them set for a bit until they're room temperature.
Preheat your oven at 325°F, put a packet of ribs in the oven on a baking sheet and let it cook for about 2-3 hours, or until its tender. I did mine for about 2.5 hours.
That's it! They are ready for the grill now, if they are not going directly to the grill after this, refrigerate them, but get them out early enough so that they're room temp again before grilling.
Using your favorite BBQ sauce, start grilling. Cover one side with sauce, cook for about 5-6 minutes, then flip and repeat until the meat is no longer pink in the center.
