Rather simple to make; this recipe combines the taste of sweet southern corn-bread with a tex-mex ground beef taco taste. Very Filling! I found the original recipe in a small town church cookbook. This version is much the same but I notched it up with my own taco-meat seasons. I've made it with sub-recipes of scratch corn bread and taco beef; you can substitute your favorite cornbread mix or taco seasoning packet and the result will still be quite pleasing. I'll write a simple version here.
You'l need:
1 lb ground beef ( I use 1/2 lb beef and 1/2 lb ground turkey just as well)
1- small onion, diced
1- clove garlic diced or minced
1/4 cup green pepper finely chopped
1= package of Taco seasoning (or substitute your fave concoction of red pepper, salt, cumin, pepper, etc) {1 tesp cumin, 1/2 tsp garlic powder, 5 tobasco peppers chopped, 1/2 tsp old bay season, 2 dashes of tobasco sauce}
1= 8 oz. can of Tomato sauce
1- 8.5 oz box of Jiffy corn muffin mix (and with it an egg and 1/3 cup milk)
1 cup shredded cheddar or mexi- mix cheese
Chopped fresh lettuce, diced fresh tomato, and sour cream to garnish. Use your imagination, - cilantro, lime/lemon juice, radish etc.
This will serve 3 to 5 furs depending on appetites!
Preheat your oven to 400F. In a 9-10 inch iron skillet, brown the ground meat, onion, and peppers. Drain some of the grease off. Stir in your tomato sauce and taco flavor mix; when mixed well, turn off heat.
In another bowl prepare your corn muffin mix according to the package directions. (I use Jiffy or Martha Washington mix) pour and spread this batter evenly over the meat mix in the skillet. Put the skillet into your oven, bake at 400F for 15 minutes, or until the cornbread becomes golden brown. Remove the skillet from the oven, let it cool a moment whilst you rustle up a large plate. Then put the plate over the skillet, and turn it all upside down to DUMP thecontents on your plate. Set the now empty skillet aside, and sprinkle your Taco Dump with about a cup of Shreddded cheese.
Serve while hot, with fresh chopped lettuce, tomato, sour cream - whatever garnishes you desire. It's a meal in itself but don't hesitate to serve with anything else, like refried beans or rice. It'll yield some good left-overs; you can pack these for lunch next day. BTW a great dish to take to a get-together!

This really looks yummy, I'll have to copy and paste the directions and print them out and try this sometime .... it also looks like it's totally full of sin for the waistline, but like they say, if it tastes good then it's bad for ya, if it's expensive then it is healthy *shrugs* what ya gonna do. SB.

Smoot took me & Wanda to a Olive Garden Saturday... I got a bowl of Touscan sausage & broccoli soup. When it was set in front of me, it was kinda off-white and chunky. Like someone raulfed into a bowl. But it sure didn't taste that way! It was delish!
