I've always been welcome to requests and
badjuju1986 put me to the test again! They wanted a snack to satisfy a sweet tooth but also being healthy. This may not look healthy, but it's so good and I can't believe I had to get outside help on this. My photography friend (the one that likes to take the photos) actually came up with this. So I present to you ... a request completed!
Ingredients:
3 crispy and slightly tart apples (honeycrisp used here)
1 tsp lemon juice
3 tbsp creamy peanut butter (or vegan peanut butter)
1/4 cup sliced almonds
1/4 cup pecans
1/4 cup flaked unsweetened coconut
1/4 cup dark chocolate chips ** (or vegan chocolate chips)
Directions:
Slice up the apples thin enough so it would be easy to eat the slice in one or two bites. Lightly spritzed the apples with lemon juice to keep them from browning too fast.
Melt some peanut butter–until it is super runny– in a microwave in 30 second intervals to avoid burning. Drizzle it all over the apples.
Top the apples and peanut butter with unsweetened flaked coconut, sliced almonds, a few pecans and, of course, chocolate chips. (I drizzled a little more peanut butter onto this. Ya know, for good measure.)
**There has be research done in the field of health with dark chocolate. It can significantly improve markers of insulin sensitivity. It can also decrease fasting insulin and glucose levels. It has a lot of antioxidants, helps to improve blood pressure and blood flow, and help brain function. High-quality dark chocolate is sold in health food, specialty, and grocery stores. Look for bars that contain 70 percent cocoa or more.**
