It's depicting ponies as realistic persons that's appealing. Cartoons are usually just walking and talking allegories or metaphors, or just shallow characters. In order to love a character, you can go two ways. First one is easier, stripping anything unlikable from them, so you develop a simple crush. Other way is more harder, showing everything about them - the good and the bad - and accepting how they are, with all their errors and flaws.
