Its ether one, I have always herd her name pronounced "Launch" so thats the one i went with

Its actually "Lunch"
The name "Launch" was created by Funimation. Im guessing because "lunch" for a name sounds silly and "launch" since she deals with guns and such would be a better suiting name.
