A tasty treat for any local furmeet or for having friends over that can be made in advance.
Ingredients:
350g/12oz plain flour, plus extra for rolling out
1 tsp bicarbonate of soda
2 tsp ground ginger
1 tsp ground cinnamon
125g/4½oz butter
175g/6oz light soft brown sugar
1 free-range egg
4 tbsp golden syrup
Equipment Needed:

Fox cookie cutter (These can be bought from Tablewhere or Ikea)
Seive
Method:
1. Seive together the flour, bicarbonate of soda, ginger and cinnamon into a food processor. Add the butter and blend until the mixture looks like breadcrumbs and stir in the sugar. (If you don't have a food processor put the ingredients into a bowl, add the butter and rub it in with your finger tips until it looks like breadcrumbs, stir in the sugar).
2. Lightly beat the egg and golden syrup together, add to the food processor and pulse until the mixture clumps together. (If doing by hand, make a well in the center add the egg and golden syrup mixture and stir it together with your hand until it clumps together). Tip the dough out and knead briefly until it feels smooth, wrap in clingfilm and let it relax in a fridge for about 15 minutes.
3. Preheat the oven to 180 degrees celcious/350 degrees Fahrenheit. Line two baking trays with grease-proof paper.
4. Lightly flour a work surface and roll out the dough to about 0.5cm thickness. (To ensure it is even, take a few steps back from it and look at it). Using the fox cookie cutter, cut out the foxes and place them onto the baking sheet. (If the dough is sticking to the cutter, rub a little flour against the cutter).
5. Bake for about 12-15 minutes, or until lightly golden-brown. Leave on the tray for 10 minutes and then move to a wire rack to finish cooling.
