Chicken. We all have chicken so often. How do we make it more enjoyable? Why, stuff it full of spinach and Boursin cheese, wrap it in bacon, and bake it, that's how! I butterflied the chicken breast to create a pouch for the filling, then wrapped each using two slices of bacon. I accompanied the chicken with a baby spinach salad, including golden apple slices, crumbled Boursin cheese, toasted walnuts, and a homemade vinaigrette. ooh, quick question - do you pre-cook the chicken to a certain amount before putting it with the bacon in the oven? Was just curious - chicken cooking times vs Bacon cooking times tend to be opposite ends of the scale (I find 30mins for chicken, but only 10mins for bacon) so was curious to know if you pre-boiled the chicken or something
