
Heat oven to 200°C. Put potatoes in a roasting tin as a platform for the meat. Sit the pork on top, then pour marinade plus ½ a cup of water over the pork. Cook for 30 minutes to start the crackling crisping up. Now turn down the oven to 150°C, cover the tin with foil and slow cook for 3½ hours. Remove from the oven and leave to rest for 30 minutes. Serve with apple sauce.
Incidentally, this piggy can make his own apple sauce. Simply place a sack full of your favourite apples underneath where he's going to land. And if you don't want to eat pork, you can still use the apples to make a delicious apple sorbet. Simply mix with icing sugar and lemon juice, freeze for 1 hour, and enjoy.
