
There's a long-standing belief that Walt Kelly based Mlle. Hepzibah not just on the cliche of the French maid, but also his first or second wife. (I forget which.)
Quite some number of years ago, but not so long ago that Pogo was still in the papers at least, I was working for a little business concern that changed names month by month, depending on what they were peddling. At the time I did this it was "The Chef Center" or something, and found job placements for chefs in high class restaurants and hotels. (In theory... the company was something else a few months later, so they mustn't have done too well at it.) I was paid rather well to do a bunch of brochures and illustrastions for their training manuals. Drawing kitchen and hotel staff brought this to mind and I took a moment from my lucrative work to knock this off.
Oh those were the days... $20 an hour sometimes, when that was high pay outside of a law office.

Usually heady stuff like "show courtesy to the customer. Don't contradict him or her flatly, but seem to agree while discretely pointing out the totally fuckheaded error of their ways." I'd draw a cartoon of a waiter vigorously arguing with a man and women dining, say. It could be fun, in a perverse sort of way. I also sold them an article once, rejecting outright the premise that customers want superior service -- I claimed we wanted meals or hotel rooms to be cheap!
