You may hate it or love it, but, tofu IS a food!

Well a friend is having a vegan visitor and didn't know how to cook tofu so they purchased some tofu and asked me to cook it for them. The tofu cubes are going to eaten as is but the marinated ones are being incorporated into Cold Rolls. They all turned out great and were delicious although I didn't get to see or taste the finished cold rolls. There are three photos in total

TOFU – Organic – non GMO, all natural, lactose free and cholesterol free
1. This is the most important step: drain then sprinkle firm tofu with salt and put on a plate, place another plate on top and a couple of 400g tins to gently press the tofu down. Leave for 30 minutes to 1 hour.
2. Rinse the salt off the tofu and cut to desired shapes, cubes, sticks, cutlets/triangles etc.
3a. Roll and pat Tofu in a Crumbed Mix – vegan bread crumbs, mixed herbs, mixed spices, salt and pepper.
3b. Roll and pat Tofu in a Mixed Herb Crust – mixed pepper, salt, mustard, paprika, rosemary, basil and oregano.
3c. Soak for 30 minutes to 1 hour in a Marinade of your choice or the following combination – combine 1 cup soy sauce, 1/2 rice wine vinegar and 1/4 cup sesame oil.
4. Place evenly on a non-stick or lined baking tray and bake at 190°C for 20 minutes, turn over bake for a further 10 minutes.
Note: if you are doing small cubes and sticks reduce the cooking time.
5. Serve either hot or cold as desired.
Serving suggestions
Serve crumbed or herb crusted cubes as is all hot and crunchy or let go cold and eat them cold
Serve crumbed or herb crusted cubes over fresh salad of your choice.
Serve hot with a mix of roasted vegetables (This is even better using the cutlet or triangular cut)
Marinated sticks can be served just like cubes or added to other recipes such as soups, rice balls, sushi and cold rolls
Cold Rolls: wrap tofu, carrot, cucumber and cooked, cold fine noodles in rice paper with your choice of dipping sauce...peanut dipping sauce is very nice with this.
