Well, since most Joseon dynasty paintings depicting the war were made in 18th and early 19th century, and very few, if any, paintings regarding the subject were made during the war, I am afraid that I can't provide you any period material. However, I believe that following illustrations drawn by 불나방 depicting 16th century Joseon dynasty army are sufficiently accurate.

Well, I can only open the second link, the other two seem to be broken.
Anyways, that one i can see looks interesting. Shows that there was no use of heavy armor, like lamellar made of iron used by the soldiers in Korea back then.
I did read some about the first Jap. Invasion of Korea in the 16th Century. From what I know had the Kingdom no standing Army when the Japanese first invaded.

Well actually there was almost no use of "iron" lamellar armor in korea. They traditionally used leather instead. But hauberk(쇄자갑) and Plate and mail armor(경번갑) was widely uesd during 14-16th century.
