Apple Pie Rollups
Real apples cooked into pie filling, rolled into from-scratch flour tortilla, sprinkled with sugar and cinnamon, and baked to a golden brown. A few simple ingredients, some baking magic and presto Apple Pie Rollups.

Flour Tortilla Recipe

Time to make: 20 minutes
INGREDIENTS
3 cups flour (unsifted bleached all-purpose)
(3 cup flour = 16oz = 453g)
1 teaspoon salt
1 teaspoon baking powder
1/3 cup vegetable oil
1 cup warm water
INSTRUCTIONS
Combine flour, salt and baking powder in the bowl of a stand mixer. With the dough hook attached mix dry ingredients until well combined (about 1 minute). Add oil and water with mixer running at a medium speed. Mix for 1 minute, stopping several times to scrape the sides of the bowl. After about 1 minute, or when mixture comes together and begins to form a ball, decrease mixing speed to low. Continue to mix for 1 minute or until dough is smooth.
Transfer from mixing bowl to a well-floured work surface. Knead dough for 30 seconds if not uniform.
Divide dough into 36 gram balls. Flatten each ball with the palm of your hand as much as possible. If dough is sticky, use a bit more flour. Cover flattened balls of dough with a clean kitchen towel and allow to rest for 15 minutes before proceeding.
Apple Pie Filling

INGREDIENTS
4 medium apples (tart variety like Granny Smith)
2 tablespoons butter
1 teaspoon cinnamon
3 tablespoons water
⅓ cup sugar
1 tablespoon + 1 teaspoon cornstarch
2 tablespoons water
INSTRUCTIONS
Peel and core apples. Dice apples into ¼” x ¼” cubes and smaller.
Melt butter and cinnamon over medium heat. Mix well. Stir in apples, sugar & 3 tablespoons water.
Cover and cook stirring occasionally for 4-6 minutes or until apples very slightly softened.
In a small dish combine cornstarch and 2 tablespoons water. Mix well. Add to pan while stirring and continue to cook until apples are soft (not mushy) and filling is thickened. Let bubble 1 minute. Cool.
Notes
Some apples are juicier than others. If you would like your filling thicker, combine 1 tablespoon cornstarch with 1 tablespoon water. Add a little at a time while the mixture is boiling until you reach desired consistency.
Apple Pie Rollups

time required: 45 minutes preparation + 30 minutes backing
INGREDIENTS
12 tortillas dough pieces (see above)
408 grams of apple pie filling (see above)
1/2 cup sugar
1 teaspoon cinnamon
1/3 cup melted butter
INSTRUCTIONS
Preheat oven to 350 degrees.
Roll each 36 gram dough piece into a rough rectangle, about 6.5” x 4.75”, keep work surface and rolling pin lightly floured.
Lay 34 grams of apple pie filling in a 5” line down the center of the 6.5” direction of tortilla. Fold the ends up and over the end of the apple pie filling. Fold the two other edges over the filling. Before folding, lightly brush water on dough (with pastry brush) where dough will touch dough. Set rollup aside for 10 minutes to allow the water to seal the rollup. Combine cinnamon and sugar.
Place rollups seam side down on a parchment baking paper lined cookie sheet. Brush with melted butter. Sprinkle with cinnamon/sugar mix. Prick rollup with a fork (making four small holes) in the center.
Bake at 350 degrees for 12 minutes.
Remove cookie tray. Flip rollups over. Brush with melted butter. Sprinkle with cinnamon/sugar mix.
Return to oven. Bake at 350 degrees for 12 minutes.
Remove from oven and cool for 15 minutes.
Note: If you do not have a kitchen scale for accurate baking, this one is great.
