Totally had forgotten ta post this back after thanksgivin'... been so busy/sick 'round the holidays it'd slipped m'mind... an hey m'480 years old... see how sharp YER memory is after 3-4 hundred years lol ;)
Anyways... the turkey stuffed cukes were stuffed with some of the leftover turkey salad that m'roomie'd made... jus' sprinkled some parsley flakes on top fer presentation...
The turkey stirfry though was/is a lil' thing I tried experimentin' with usin' some of the leftover (both white an dark) turkey meat that if yer feelin' curious after thanksgivin' ya can give this dish a try... I actually found that it works really well t'gether...
Fix up some white rice as ya'd normally do an while that's cookin' have yer stirfry veggies (had some leftovers from a bag of carrot/broccoli/califlower mix, some mushrooms, half a leftover onion I diced inta large chunks an cooked'em all up in a lid-covered skillet fer a bit, occassionally addin' in a few shakes of soy an teriyaki sauce... an while that was fryin' up I took out chunks of some of the turkey meat an cut it down inta smaller chunks... after the veggies had softened a bit I turned the burner off under'em an added the turkey ta let it jus' heat cook fer a couple minutes (cause ya know turkey pretty much falls apart inta mush when it's recooked heh ;)
...an there ya have it... the turkey meat also really tends ta soak up the soy/teri sauces so be cautious of how much ya use... Other'n that this makes fer a wonderful way ta serve up some'a yer thanksgivin' turkey if ya haven't considered it... so if ya do try this I hope ya enjoy... :)
