
Mediterranean Squash
This combination of onions, zucchini, yellow squash, and tomatoes made a delicious vegetarian side dish during wuff's not-quite-successful attempt at Sous Vide fish tonight. However, this side is simple, easy, and very tasty! Only needs a few minutes and one fry pan to make.
So here's the recipe for all. Hope you enjoy it as much as wuffy did.
Note - Ukrainian Village Seasoning is a delightful blend of salt, pepper, onions, garlic, green onions, and bell peppers. The Spice House provides it, and they have a website here: http://www.thespicehouse.com/spices.....soning#content You could also find similar blends at Penzeys, or use Mrs Dash or your favorite market blend.
Ingredients:
2 small Zucchini Squash
1 small Yellow Squash
1 medium Onion
1 can (14.5 oz) Diced Tomatoes with Italian herbs
2 Tbs Olive Oil
~1 tsp Ukrainian Village Seasoning
Salt and Pepper to taste
Directions:
Slice the onion in half end-to-end, nip off the stem and roots, then slice into 1/4 inch sections. Break the slices up in to half-circle segments
Slice the zucchini and yellow squash in half lengthwise, then slice into 1/4 inch half-moons
In a skillet over medium high heat, heat the oil until shimmering. Add the onions and cook, stirring frequently, until they begin to turn translucent
Add the squash slices, and stir together with the onions. Fry until the squash begins to get tender.
Add the can of tomatoes with juice. Stir together. Season with Ukrainian Village (or your selected condiment) seasoning. Cook until the flavors meld (3-4 minutes)
Taste, and adjust seasonings with Salt and Pepper, as desired.
Continue to cook, stirring occasionally, until liquid is reduced to your desired level of "sauciness".
Reduce heat to warm and serve. Makes about 4-5 servings.

*chuckles* Well, you KNOW fuffy likes a fur with a nice big tummy! *grin*
This did taste pretty darn good, and is one of Vrghr's few recipes to qualify as "vegetarian". Really not that high in calories either. Might even be considered 'good for ya'.
