
Hello! I have another creation from the depths of my brain!
This time is leftover rice!
Put some oil in a large pan (or wok) on high.
Add leftover rice (about 2 cups) to oil when hot and mix until most of the grains are coated in oil.
Make an indentation in the rice and fill it with 2 beaten eggs. Cook it while you mix it so the egg can seep through the cracks in the rice while also making scrambled eggs! (it saves time) After it's about half cooked, mix it all together so the egg can cover each grain.
Add cooked sausage, garlic, onion, whatever to your rice. Just slap everything you want in it together! But do keep in mind the salt in whatever you're putting in~
For this dish, I wanted pineapple so I cut one, shaped the inside into a bowl and used the fruit and filled the pineapple crevice with fried rice.
Top with oregano and add salt & pepper to taste.
