Evangelions are often mistaken for giant robots, but they clearly are not robots, but cyborgs, living organic creatures with cybernetic machine and computer components grafted onto them (Technically their armor). They have all the organs a regular living creature would have, I don't know about Sexual organs though. In that case she'll be digested, and yes that was a female soldier not a male.
