This is the slice I cut for my hubby. I didn't have any since I don't like chocolate but everyone at home liked it.
Here is the recipe for the cake since it would be a perfect valentines cake.
The recipe is in ounces, so make sure you have a digital scale at home.
Sacher Torte
5.37oz almond paste (prefer 50% almond paste)
2oz sugar #1
1.87oz whole eggs
3.37oz egg yolks
1.62oz melted butter
1.62oz pastry flour
1.62oz cocoa powder
5.12oz egg whites
2oz sugar #2
1. Line 2 cake pans.
2. Warm the almond paste in a microwave.
3. In a mixing bowl with the paddle attachment, mix the almond paste with the sugar #1.
4. Add the egg yolks slowly, mix well, and then add the whole eggs slowly. Mix for about 10 mins.
5. Add the cooled melted butter, flour and cocoa powder.
6. Pour batter in a separate bowl. Wash mixing bowl and remove paddle attachment.
7. In the mixer with a whisk attachment, whip egg whites with sugar #2 until soft peaks have formed.
8. Fold whipped egg whites into batter.
9. Deposit evenly between the cake pans.
10. Bake at 335 degrees for 30 to 35 mins. Check cake with a toothpick from time to time to prevent burning.
Assembling:
Let cake cool. Once cool, cut in the both cakes horizontally to create layers. Spread apricot jam between layers. Once stacked together pour chocolate glaze over cake. You can have two separate cakes or one huge cake. Make sure the cake is cooled down before applying glaze.
Chocolate Glaze
7.5 oz light corn syrup
7.5 oz 35% cream
1.75 oz glucose (can sub with more corn syrup)
5.25 oz coating chocolate
9.25 oz 64% chocolate
1. Bring cream, glucose, and syrup to a boil.
2. Chop chocolate (if in block form) and then place in a bowl.
3. Pour boiling liquids over chocolates, and let stand for 2 minutes.
4. With rubber spatula, form an emulsion. Do not use a whisk.
5. Let cool for 4-5 mins and Use. Or, cover surface with plastic wrap and store in refrigerator. When needed reheat in microwave or over a bain-marie then, use.
