my psychiatrist asked me last week if i would make a cheesecake for her when she came home to me on the weekly visit and i agreed to do so. unfortunatly shes been sick so now im stuck with a whole cheesecake =D. anyways. i showed my mom the picture to show her how good i have become at this. this was her reply which makes me feel incredible proud and i got tears of happiness.
" If your grandmother was still alive she would had been the proudest grandmother on earth by seeing this. your cheesecake looks exactly as she used to make them. if she was alive and you made her that cake she would had cry her eyes out in joy and happiness. " my grandmother did the best cakes in the family no matter what cake it was. no one have ever been able so far to get close to her cakes in my family and yet i am maybe about to be the next generation in my family for this stuff :). there is only 1 more thing left to do and that will be to have my dad taste my cake, my dad is a big fan of cheesecakes but he never had a chesecake as good as my grandmothers yet. so i am hoping i can get close to his taste =D
anyways here is the recipy for it. i hope you all enjoy it!
●●●●biscuits Bottom●●●●
● 250 g digestive biscuits ( i have no idea if those biscuits are named that over there. but they are here in denmark )
● 125 g butter
●pre heat the oven at 175°
●crush the biscuits or blend them
●Melt the butter over low heat , and stir it with the crushed biscuits
●Press biscuit mixture into bottom of springform tin ( again i have no idea if a springform tin is correct term of english. sorry some word i dont know proberly :P )
●Make sure the surface and especially the edge is pretty straight
● Bake the biscuit base in the oven for 10 minutes. Let it cool completely in the tin
●●●●Cream Cheese Cream●●●●
● 3 gelatine
● 400g cream cheese
● 100g icing sugar
● 2 tsp . zest ( google translate is a bitch xD )
● 2½ dl whipping cream
●Add gelatine in a large bowl cold water for 10 minutes.
●Whips cream cheese , icing sugar and finely grated lime zest together in a large bowl
●Whip the cream to soft whipped cream in another bowl . Add the soaked gelatine in a small saucepan with the water that clings to . Melt the gelatine over the water bath or a very low heat directly on the stove without bubbles or boils.
●Stir 4-5 tbsp. whipped cream with the melted gelatin , using for example, a spatula . Turn the rest of the whipped cream with cream cheese cream.
● Turning finally the gelatine - cream mixture quickly with cream cheese cream.
●Spread the cream on top of the biscuit base of the springform tin and fold leap mold slightly in different directions so that the surface becomes smooth . Put the cheesecake in the refrigerator for about 2 hours so that the cream cheese cream gels.

● 1 glass of red currant jelly
● 400g fresh raspberries ( u can also use frozen )
●Melt currant gel in a saucepan over low heat . It just has to be melted, not burning hot . Pour the melted red currant jelly out on the frozen cheesecake and turn immediately leap mold around with your hands, so the hot jelly spread out evenly over the entire surface .
Set quickly raspberries close together in the hot gel before it reaches to solidify completely.
And there you have it. a recipy to my cheesecake :)
