An elegant recipe from

This was our Christmas dessert last year. So amazing, dense yet still light flavors.
***NOTE: I couldn't find ripe peaches in winter (of course) so I used 2 cans of halved peaches in fruit juice. Worked just as well.
CAKE:
6 tblsp (3/4 stick) butter, room temp
1/4 cp honey
1/4 cp packed golden brown sugar
1 1/4 cp flour
1 1/2 tsp ground cardamom
1/2 tsp cinnamon
1/4 tsp baking soda
1/4 tsp salt
3/4 cp sugar
1 egg
1/2 cp plain whole-milk yogurt
3 small (or 2 medium ripe) peaches pitted, thinly sliced
1. Preheat oven to 350 degrees F
2. Butter a 9" round cake pan
3. Melt 2 tblsp butter in small saucepan, stir in honey and brown sugar. Boil until mix darkens slightly (2ish minutes). Pour honey mix into pan to coat bottom completely, let stand.
4.Whisk flour, cardamom, cinnamon, baking soda, and salt in bowl.
5. Beat sugar and remaining butter until fluffy, add egg. Mix in half flour mix, then all the yogurt, then remaining flour mix until just blended.
6.Arrange thinly sliced peaches decoratively over honey mix (it will be firm), cover the bottom completely (yes even those little holes) even if it doesn't look perfect.
7. (this is the FUN part) Drop batter by spoonfuls evenly over peaches. Gently spread to cover completely. (it will not want to spread easily. I recommend to the use of your fingers to nicely push it around even though you want to smash it all because IT WON'T SPREAD.)
8. Bake until cake begins to pull away from the sides of pan and a tester comes out clean. about 40 min.
9. Cool cake on a rack for 5 min. Run a small knife around pan sides to loosen cake. Place a platter or large plate over pan, FLIP GENTLY. If it doesn't come off first try, run a knife again and GENTLY tap the bottom. DO NOT SHAKE IT OR ELSE!
HONEY SWEETENED WHIP CREAM:
3/4 cp chilled heavy whipping cream
3 tblsp honey
1/4 cp plain whole-milk yogurt
1. Using electric mixer beat cream and honey until soft peaks form. Fold in yogurt
Serve warm with a dollop of sweetened whip cream.
