Because I've been going mad looking for something new to try at home (since work is stale and uncreative) I used the upcoming Chinese New Year as an excuse to try making mochi.
Because I don't have a giant wooden mortar and pestle, the traditional method of making mochi was a no-go. So I had to use an "easy-bake" recipe. But, because I live in the middle of uncultured midwestern USA finding the right rice flour I needed had to be subbed with regular rice flour (which by itself was a task to find).
This was the result of three batches made. The first lumped together, the second hardened into basically rock candy, and the third was too soft and melted. I just couldn't get that "Goldilocks" just-right dough.
