Being able to communicate with the ship's library from long range is unbelievably helpful, even more so when its your science officer who is hooked up to it and can look through all the collected rather quickly!
Sure Pixal could do this all in her head, but she likes having visible representations to work with.

Alphonse Elric was a soul inhabiting a empty armor.
These are beings full of circuits and parts. Decapitating them is pretty much breaking them. For the head to keep functioning it would first need to survive the force of the impact.
Then it would need a separate power supply from the one that usually powers it to keep functioning.
