This one is a little weird so I will explain it.
While in the hospital i spent a huge amount of time watching FoodTV. I saw one of their chefs (no idea who) make a Mexican lasagna featuring a green chili salsa and ground beef in between layers of tortillas. I personally don;t like salsa so i adapted her recipe into an Italian lasagna made of tortillas.
First the ingrediants:
Beef
Tortillas (9 inch or larger)
pizza or marinara sauce (1/2 can)
a mix of shredded cheeses- I used an Italian per-made mix (Parmesan, mozzarella, provolone and Romano) and a Colby jack cheese.
Cake pan- 9 inch diameter
Parchment paper
Layer the cake pan with parchment paper so it covers the bottom and sticks out to either side (over the pan edge) by about three inches. This step makes this dish a no-clean dish for the cake pan itself and makes it much easier to slice. another tip is to buy ten to eleven inch tortillas so that they layer the entire bottom of the pan and go up the sides.
Place one tortilla at the bottom of the pan.
Brown the beef in a skillet and once it has completely browned add the pizza sauce and cook them together for roughly five minutes to marry the flavors. You can add seasoning now (I prefer an Italian dry herb mix.) Place a small amount of the meat mixture in the center of the first tortilla. You are looking to make five to six layers so keep that in mind for each layer, using roughly a quarter to 1/6th the meat mixture each layer. This particular example had six layers so five doses of meat plus the cover. Add the cheese mixture on the top and optionally add a small dollop of sour cream in the center.
Build the remaining layers as before, pressing down firmly with each layer to compress the dish.
Once the lasagna is built into the cake pan, place the pan in an oven at 350 for about 45 minutes. Check it around 35 minutes to make sure it hasn't blackened on the edges or top.
when the dinner is done remove from the oven and seize either side of the parchment paper and lift up in one fluid motion. if you did not add too much pizza sauce the entire dish should lift up as one solid mass and leave you with the parchment paper to slice it on. Place on a platter and serve immediately with additional sour cream if desired.
