Now just because I was on vacation, doesn't mean that I completely vegged out on the couch...
Though you can see I vegged here, so to speak :P
Ingredients:
4 Chinese eggplants, sliced lengthwise
2 heaping tablespoons olive oil
2 heaping tablespoons balsamic vinegar
2 garlic scapes (its a relative to the scallion, tastes just like garlic) chopped
2 scallions, chopped
salt and pepper to taste
...sadly, no BACON *weeps*
All you have to do is cut the eggplants - salt them on their flesh...then coat liberally with the olive oil and roast them in the oven at 375 F for 30 - 35 minutes or until browned then when done, get it out while its hot, and coat with the vinegar to let it cool!
Then add the chopped scapes and scallions...you can also put on a touch of orange zest / lemon zest, and this is good either hot or cold!
