in Zbrush, I've been forming every single edge from scratch and learning a TON of stuff about optimization while doing it

I agree, I really like the flatter simple shaders and don't like that new "Plastic"y looking sheen that every other 3D model has. I still haven't finished the real texture and bumpmap it will have, but I'll really be going for a "Painterly" aesthetic there to try and make something really unique and apart from the texture/look that most people are used to in 3D. I'll try to remember to keep FA updated on that and get feedback from y'all hopefully. Thanks!
