
Ham Balls in Cherry Pineapple Glaze
Wuff was a bit concerned about posting this recipe on FA; the titillation factor of the title is definitely leaving your humble wuffy wide open to all sorts of PUNishment in the comments. *grins* But these tasted so darn good, that Vrghr couldn't deny his fur friends the treat.
These are well-known in Southern circles as a great buffet dish and comfort food. The "typical" version is basically a ham and sausage meatball, cooked in a sweetened and vinegary tomato sauce. Of course, you KNOW wuffy couldn't just go with a "typical recipe". Naw, this wuff had to kick things up!
Wuff took a riff on one of his favorite Easter Ham glazes; pineapple with Maraschino Cherries. Then spiked up the sauce even more with some Sherry, and a touch of heat from Sriracha, along with a touch of spicy mustard.
The typical ham and sausage mixture also got kicked up with the substitution of Maple-flavored sausage, along with the addition of a goodly portion of ground bacon, as well as a touch of sweet spices
Result: It's a good thing that wuff did the photo session before sending these out to the church buffet! Because NONE CAME HOME! *whimper* They even scraped the crock pot nearly dry of all the sauce! Wow!
At least wuffy got his bites in, and they were well worth it! Robust ham flavors with distinct bacon notes. Sweet yet savory, and a very complex, strongly cherry flavored sauce that would go wonderfully with Vienna Sausages, ribs, chicken, and many similar items! Wuff wanted to just lap it up by the cupful. *grin*
This makes use of one of those "formed and pressed ham loaf" things. They might be the "singles cheese slices" of the ham world; almost but not quite "real ham". But they definitely shine in this recipe! You'll also need a food processor or a meat grinder to grind up the ham and bacon.
Ingredients:
For the Ham Balls
1.5 lb Ham
1 lb Maple-flavored Ground Sausage (Jimmy Dean)
1 lb Bacon, thick
½ tsp ground Black Pepper
1/8 tsp ground Cloves
¼ tsp ground Nutmeg
2 C unseasoned Bread Crumbs
2 slices Bread
3 Eggs, lightly beaten
½ C Milk
For the sauce
1 10oz jar Maraschino Cherries (w/juice)
1 8oz tin Crushed Pineapple (w/juice)
1/3 C dry Sherry
½ tsp ground Black Pepper
¼ tsp ground Nutmeg
1 tsp ground Mustard Powder
½ C Cider Vinegar
1.5-2 tsp Spicy-Sweet Mustard
½ C Tomato Ketchup
1/3 C packed Brown Sugar (or half Splenda, Half Brown Sugar blend)
Optional: 2 tsp Sriracha sauce
DIRECTIONS
Prepare a large rectangular (9X13) cake pan or low-walled casserole dish by spraying with cooking spray.
Using a meat grinder or a food processor, grind up the ham and the bacon.
In a large bowl, mix together the maple sausage, ground bacon and ham, and the remaining ham ball ingredients.
By hand (easier) or with a large heavy spoon, work together and mix thoroughly until everything is a homogeneous, sticky mass.
Roll into ping-pong to racket ball sized balls, and place into the sprayed cake pan or casserole dish.
Pour half of the cherries and all of the juice into a microwave-safe bowl.
Add the remaining sauce ingredients and whisk together.
Heat on high for 2 minutes. Whisk, and heat another 2 minutes. Whisk again.
Pour sauce over and around the ham balls.
Bake, uncovered, in 325 degree oven for 1 hour, flipping the ham balls over at the 30 minute mark.
Remove to slow cooker, pouring all sauce possible over them. Add the remaining cherries. Set to warm, and cover.
Ready to eat immediately, or can hold for buffet 3 or more hours. Stir VERY GENTLY to coat with sauce before serving (Ham balls are very tender and will break up if stirred too hard.)
Makes 35-50 balls, depending on size. We made 45 golf ball+ sized balls

If you're friends with the meat counter people at your local market, you might be able to get them to mince/grind the ham and bacon for you if you buy it there. Wuff has had good luck with his local butchers at the market cutting up special orders, but hasn't tried asking them to grind anything yet. However, wuff knows that some will.
A decent but cheap food processor can be a handy gadget to have. And wuffy here was lucky enough to pick up his little hand-crank meat grinder for next to nothing at a garage sale. Takes quite a bit of "elbow grease" to use it, but it's a very nice little thing for what it does.

Only ones we knew left after the closest local Publix closed for renovations and was demoed last year. They just finished rebuilding it and opened the doors today, and none of the old employees have returned. I may be able to find a good price on a processor soon though. Just need to wait a couple of weeks for work's "Conversion" to finish. They finally announced it and one of the perks is a 10% discount. Not much granted, but should make it a bit easier to nab, right?
Make sure to check out your local Salvation Army or other Thrift stores before you spring for a new one. They frequently have those turned in by folks who upgrade, are moving, or don't use them often enough for the counter space.

Wuff loves those meat balls too, but these were unlike any of the "traditional" meat balls wuff has tasted. Very strongly ham flavored, with lots of good pork sausage and bacon flavor on top of that. These are really yummy! Wuff is definitely going to have to make more of them, and will try different sauces on them - should be a LOT of possibilities there! Like a nice rum raisin, or a spicy tomato chipotle, or maybe a mustard honey variant YUM!
