
This is how I do a simple pork roast. I added potatoes, carrots, onions and celery slices to the bottom of a pan, along with a box of beef stock for water/steam. On top of the vegetables I placed the pork roast and then layered it with a seasoning rub including chili powder, Italian seasoning mix, and Mrs. dash seasoning. The pork roast itself goes into the oven at 400 degrees for about ten minutes. Then you need to reduce the heat to 300 and continue to roast the pork for roughly 30-45 minutes depending on the size (a three pound roast will be done in thirty, six in forty five.) Then remove the roasted pork and let it sit for about ten minutes. In the mean time raise the oven temperature to 450 and roast the vegetables for about ten to fifteen minutes until the potatoes are soft and the beef stock and pork mixture has slightly thickened. Slice the pork and serve with the reserved stock mixture and vegetables.
