I like the sock specifically because I expect people to wear proper socks with their feet to keep them clean and dry, and this way I know how to accommodate both the wearer and their sock. It's much the same as requesting people to wear their diveskin/Underarmor along with any personal cooling vests to make their DTD: guesswork has no place when it comes to fit for me!
For stuffing the feet for casting, I always jam in plastic grocery bags! For full-size DTDs, I prefer packing peanuts- light enough I can still toss around a DTD bigger than myself with ease, but sturdy enough (if you pack it good and tight) to maintain a shape for patterning. Bonus: you can usually get packing peanuts for free if you ask around! I've never bought them myself, I recycle the ones I receive (and my friends and inlaws get as well).
