Sorry I would love to tell you how to make my spaghetti sauce but it isn't something you can do by following a recipe.
I will be teaching Xander how to make this when he gets down here I have been making this sauce for years now, and I always keep a little bit of the sauce as a starter sauce for the next batch. I can tell you that it does contain fresh homegrown tomatoes, fresh onions, mushrooms, basil, garlic (both granulated and minced) 80/20 ground beef lightly browned, red wine vinegar, sugar, salt & pepper, bay leaves and a bunch of other seasonings and spices that would have to be taught not out to just throw together. This sauce takes all day to simmer starting at 10:00 in the morning and finishing around 5:00 in the afternoon.

Ah, that looks so yummy!
Sounds like one of those 'sample and season' recipes, where the number and amounts of seasoning are dependent on the tastes of various veggies that can vary in flavor by season, garden, etc.
These are certainly one time when cooking becomes far more "art" than science. :)
