I find dapple a very hard color to pull off!

You draw the best darn braidwork... that running braid is awesome. His mane has real weight to it, real thickness, and looks like it's falling like it should across his neck.
No kidding - dapple grey is a terribly hard color to pull off; dapples are a bane to make look right. I still think I can't do it, and I love how you did it here - the irregularities in the sizes are perfect, that's a mistake I see a lot of folks make is that the dapples are all the same size. I love that his legs shade to a charcoal and not a true black; it really appears realistic and soft, like the shading should.

May I ask why we can't see his hind hoofs? Shouldn't they be there even when his tail is so fluffy? I mean...there should be some more of his hind legs and his hoofs.
In the pose he is showing there we should be able to see his hooks and nearly everything below I think.

You're on an artwork focused website and have been for more than a few days, quite obviously. I don't even know where to start describing this, but your question is so ridiculous it's almost painful.
The reason why the legs aren't showing isn't because the artist is incompetent and doesn't understand what she's doing. It's called doing artwork and making use of the canvas and composition. If she were to draw the legs I personally feel it would unbalance the drawing.
Besides that, have you ever taken a glance at any artbook with fantasy themed pictures? A lot of characters are drawn to make use of a frame, It's like asking why this drawing isn't 'finished' because only one corner contains the fairy and background: http://www.wtv-zone.com/califPamela.....s-1/fairy6.jpg
In short, you're the first person in 7 years I've ever seen ask this question and I'm baffled you're taking anatomy so literally. There are things called concepts, compositions and artistic influence. A lot of drawings don't include certain bodyparts to pull focus towards what's important. Some people leave them out because they won't look right.
