Yet another of Wuff's "using up leftovers" meals for his office co-workers!
This batch used up the very last of that Mushroom Pate, to serve as the base for the sauce. A bit of the Cheesy Spinach went into the sauce as well, for some extra complexity.
Vrghr also wiped out some leftover cream cheese (bagels for breakfast), and sour cream (left from another wuffy creation), along with the last tablespoon of Sherry.
Putting this together only took about 20 minutes in our little kitchen, and needed just a microwave (to heat the previously boiled pasta), and an electric skillet, along with some standard kitchen stuff like cutting boards, spoons, knives, etc.
Despite the fact that most of this was just improvised from available leftovers, plus a couple chicken breasts brought in just for the dish, it got raves from the office staff! WOOT! Makes for very happy wuffies indeed! *grins*
Since this was so easy, and yet so tasty, Vrghr decided to go ahead and post out the recipe. Makes for yet another option on good things to do with those prior "egg stuffing" goodies wuff posted earlier, should you find you have leftovers too!
Ingredients:
2 boneless, skinless Chicken Breasts
1 pkg (8oz) Sliced White (button) Mushrooms
1/2 box (~ 8oz) Radiatori Pasta (can use any nice textured pasta to "grip" the sauce)
~3/4 C reserved Pasta Water
~1/2 C prepared Mushroom Pate' (see recipe link below)
~1/2 C Half n Half
~4 oz Cream Cheese
~6 ox Sour Cream
~2 Tbs prepared Cheesy Spinach & Tomato (see recipe link below)
2 Tbs + 2 Tbs Butter
1 Tbs Sherry Wine
1 Tbs good Olive Oil
2 tsp minced Garlic
1 tsp Garlic Garni Lemon Seasoning
1 tsp Mrs Dash Table Blend Seasoning
1/2 tsp ground Black pepper
Directions:
Boil the pasta the day before, in salted water, until "as dente". Should still be a bit of resistance to the tooth. Rinse in cold water, drain, and place is zip bag in the fridge until used for the lunch
(NOTE: If making this immediately, do NOT rinse off the pasta, and save about 1 C of the pasta water when draining.)
On the day of the lunch:
Fill a large microwave-safe bowl with about 1 1/2 Qt of water. Add a teaspoon of salt. Heat in microwave until nearly boiling.
Rinse off and pat dry the chicken breasts. Slice into strips about 1/2" X 1/2" X 4" long
Heat 2 Tbs of butter and the olive oil in skillet until very hot.
Add the sliced chicken.
Sprinkle with ground Pepper, Mrs Dash, and Garlic Garni Lemon seasoning. Stir fry until no pink is showing and chicken is cooked through. (~ 5-6 minutes)
Remove chicken to plate and set aside
In same skillet, add the remaining butter. Heat until foaming stops
Add the sliced mushrooms, mushroom pate', and cheesy spinach. Stir and fry until mushrooms give up their liquid and turn dark, and the mushroom pate and spinach "melt" together with the mushrooms (~ 5 Minutes)
Add the minced garlic and the sherry wine and stir in. Allow to cook until nearly evaporated.
Stir in the sour cream and cream cheese. Allow to cook stirring occasionally, until the cheese has melted and combined with the mushrooms and sour cream.
Add the pre-boiled pasta to the heated water. Return to microwave and cook until pasta is hot and tender (about 3-4 minutes, depending on microwave)
Back at the skillet, stir the half n half into the sauce. Reduce heat to medium low.
Drain the pasta from the microwave, reserving the pasta water.
Gradually add the pasta water to the cream sauce, stirring, until the sauce is fairly thin. Allow the sauce to simmer, stirring occasionally, while making up the serving bowls.
Place a portion of the pasta in the bottom of the bowl. Top with several chicken strips. Pour the sherry mushroom cream sauce over the top of the chicken, adding enough to get down into the pasta too.
Garnish with a sprinkle of dried parsley.
Serve to hungry and appreciative co-workers.
Makes ~ 4-5 servings, depending on how hungry!
