
Potato Soup
6 Potatoes
1 bundle Scallions/green onion
1 package Bacon (I use hickory smoked)
½ gallon Half and Half
Salt (To taste)
Pepper (To taste)

The food I cook tastes good but isn’t the most healthy lol. If you have allergies to certain foods, look at the ingredients before deciding to cook this soup.
First, what I usually do is peel my potatoes. After I get them peeled, I give them a good washing to get any dirt off of them. After that, I cut the potatoes into thin slices. I then set them to boil until they are soft. While that is going, on I take the bacon and cut it (I use scissors) into about a inch pieces and fry it until it is crunchy. I fry it that long because it is going to go into the soup and it will get softer. As I am doing that, I cut the Scallions into about a half inch or smaller pieces. Once the potatoes are done boiling, drain the water from the pot and add in the half-and-half, Scallions, bacon, and yes the bacon grease. The bacon grease is important. add salt and pepper to taste. I bring it to a boil and then turn it off. letting it set for a couple of hours will enhance the taste but it is by no means require. If you do that just reheat it when you are ready to eat!
