Hm. I'm torn. On the one paw, digitigrade cavalry almost need a completely redesigned stirrup to avoid sticking a foot through it. On the other, the real danger of putting a foot through the stirrup is getting dragged when your plantigrade foot gets stuck coming back the other way, and a digitigrade foot may just slip back through a lot easier and so remove that particular worry.
So the question is, how tough is it for them to not slip through when riding at speed and losing their seat because they suddenly can't brace anymore, without a heel to hook on the stirrup?

Technically riders dont really "need" stirrups. Stirrups are just balancing aids just like saddles. All of your grip to stay on is supposed to come from your calf and thighs and your heel should never hook onto anything. Your stirrup should be placed across the ball of the foot.
The Roman cavalry never used stirrups.
"The Roman saddle was made of leather-covered wood and had two front and two rear horns to keep the rider in position, especially important as there were no stirrups." (http://www.ancient.eu/Roman_Cavalry/)

I always thought that digigrade Calvary would ride with capped stirrups to avoid slippage and the stirrup would be wider to support a wider to support a wide variety of feet. Also....hes holding the reigns wrong......*slams head on desk*....there, I said it. *sighs* why did I have to be THAT person.
P.S.

Hey, now you’ve got me curious, why is he holding the reigns wrong? That’s pretty much the way I hold em when I am relaxed, the horses are super smart and those at the farm are calm and well trained.
Yes he could be holding em a little “Higher” but you’ll need to have a stiff composure. I’m by no means a professional at this, it’s just that so far, it has worked for me.

Well to be fair, in essence there is really no "wrong" way for casual riding(unless you loose your rein)...however the placing of his hands on the reins indicates that he is using both hands to cue as in an english style so for that the reins are woven through the fingers in a fashion that provides the best grip using the strongest fingers. If he were riding in a more western style then his hand would be more centered over the horses withers and the rein would have more slack or Less direct contact with the bit. Really doesnt have to do with height rather than the position along the rein. Assuming he was trained as Calvary (though in the story I think he is self taught) He would have likely been schooled in the english stye of riding but we would have to defer to Rukis for that information considering that this is her world and for all I know that is the proper hand position for her world. Please feel free to note me...I dont want to clutter the page with my ramblings ^_^;
