This was created for a Birthday Luncheon for the folks at the office. The Birthday Girl wanted something "light", so we did "make your own" wraps, the bean salad (found here: http://www.furaffinity.net/view/16920733/), cold cuts, cheese, spinach, sprouts, etc. Wuffy whipped up some home made Tarragon and Marjoram Mayo on the spot, and taught the shop folks how to make their own Mayo at home.
To go with the stuffings for the wraps, or along side, Vrghr created this Chicken Salad. This is a somewhat exotic creation, complete with Mascarpone Cheese for creamy richness, lots of home made mayo, chopped walnuts, and grapes for sweetness. Jicama gives crunch with a nice light flavor. Fresh basis and other fresh herbs mixed into the home made mayo add a nice complexity. A little bit of sweetener in the mayo complements the sweetness from the grapes.
The chicken for this was cooked in wuff's smoker for a few hours to add to the exotic flavors of this dish. Of course, you could just bake or cook the chicken on the stove top if you wished, and add a bit of liquid smoke in the mayo, or use rotisserie chicken from your market.
Apparently, this "kitchen experiment" was a success, as several folks had seconds on just the chicken salad as a side-dish with their meal! *grins* Woot for crazed wuffy cookings!
The chicken in the picture is diced up finer to be used to stuff the wraps. If you plan on featuring this primarily as a salad, as pictured, you likely want to cube your chicken in larger chunks, but that's a matter of personal tastes.
Ingredients:
1 1/2 lb Smoked chicken breast & thigh meat (weight after skin/bones removed and meat diced)
~4 doz Seedless Grapes, halved or quartered
1 Med Red Onion, minced
2 med Carrots, shredded
1/2 C Jicama, finely chopped
8 oz Mascarpone Cheese
1 sm can (~4 oz) Chopped Black Olives
2 Tbs chopped Walnuts
1 1/2 Tbs Fresh Basil, chopped
2 tsp Sweet Smoked Paprika
2 tsp Dijon Mustard
1/2 tsp Omnivore Salt
1/2 tsp Black Pepper
1/4 tsp Poultry Seasoning
Home Made Mayo (3 Cups total)
(Needs 3 eggs, 1 for each cup of mayo, ~3 C "neutral oil", lemon juice, salt, pepper, and mustard (use the amount/type of mustard listed below)
2 cups seasoned w 2 tsp dill, 3 sprigs fresh Tarragon, 3 sprigs fresh Marjoram, 1 Tbs Dijon Mustard, & 1 packet yellow (Sucralose or similar) Sweetener
1 C w only the sweetener, 1 tsp lemon juice, and 1 tsp Dijon mustard
Directions:
Remove skin from smoked chicken and pull meat off the bones. Chop or Cube as desired. Should use about 1 1/2 lb "cleaned" meat
Sprinkle with the salt and pepper, paprika, and the chopped fresh basil
Add the Jicama, walnuts, carrots, onions, olives and grapes and mix into the chicken until everything is well distributed
Make your home made mayo with the listed seasonings (recipe here: http://www.furaffinity.net/view/16435091/)
Warm the Mascarpone cheese in a microwave for a few seconds, until it is a bit softer and easier to combine
Fold the softened cheese, mayo, and Dijon mustard into the chicken mixture until thoroughly combined
Refrigerate for a couple hours, or over night, for the flavors to combine
Makes at least 10 servings
