
Some awesome jambalaya I cooked earlier ^^ Basically what you wanna do is get some pork fat(which you can easily do from cooking off a bunch of bacon in a skillet), then slap down some diced onion, cellerie, and bell pepper a pot on a med-high setting. If you have a conventional oven, put it on probably a 7 or so. Since the fire is decently high, you wanna be pro-active about stirring constantly, preferably with a wooden spoon for easy gliding across the pot. I then put in some andoullie and smoked sausage, added the rice in to brown it up, then put in some chicken stock and some squashed up tomatoes, paprika, salt, cajun land seasoning, and cayenne red pepper seasoning. After that, you lower it down to a med-low setting, or maybe a number 3 or 4 on your conventional stove. Let it cook for probably about 25-35 minutes, checking up on it every now and again to stir. Now if you want to change the recipe a lil bit to your own taste, totally up to you. Everyone has their own way of cooking this, and some people use poultry, game, or seafood.

I recommend it dude, but as I said, you HAVE to be very proactive about stirring constantly in the beginning stages due to the fact that it's on a high temperature. Though once you have the meat and veggies and rice browned and you add the stock/maters/seasonings and lower it, you can just leave it be x3 Just check every now and again to taste-test it and see if the rice is soft enough. You might get a tiny bit of burnt stuff at the very bottom of the pot but that's no biggie. So as long as the overall food is good.
Like Chili - everyone has their own personal Jambalaya version, and frequently it amounts to "what's we got left in the fridge, Ethyl?". *grins*

You're right about begin attentive while browning things! It can VERY easily get away from you, and you have to toss it out and start again. Though once the tomatoes, stock and meat go in, thinks get much easier.
Wuff has cooked up his own version of this too. It was pretty darn yummy too, but as wuff suspects, anyway you make it, you're going to have a pot of "YUM" when you're whipping up some Jambalaya. *grin*

Yes it definitely becomes much easier once you lower the fire and put that pot top on ^^ just leave it be and let the magic happen. As far as your jumbalaya recipe, it definitely is different than all other recipes I've found. I imagine it to have more of a sweet taste than others due to the sriracha and brown sugar.
Wuff is definitely a fan of Sriracha sauce for heating things up a bit. *grins* So much more complex in flavor than Tabasco and similar hot sauces.
The brown sugar doesn't provide much sweetness; this is still a very savory dish. It just balances the flavors a bit and complements the tomato. If your tomatoes are sweet enough, you can certainly leave it out.
